Tuna Stuffed Peppers


1 large can of tuna, drained
1 ripe red bell pepper, sliced in half length ways and hallowed out
1 tablespoon chopped fresh parsley
1/4 cup chopped celery
1 tablespoon of lemon juice
1/4 cup chopped onion
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon of olive oil

In a large bowl, combine the tuna, celery, onion, lemon juice, parsley, garlic powder, salt and pepper. Mix well and
refrigerate until chilled.

When tuna salad is chilled, fill each red pepper half equally. Top with a little ground pepper and garnish with
cucumber slices. Goes great with your favorite potato salad.
