Bacon Bundled String Beans


21 Long Tender Green String Beans
3 Slices Bacon
1 Tsp of Olive Oil

Rinse and snip ends off string beans. Blanch for 2 minutes and put
them in some ice water to stop the cooking process.

Pat dry string beans and make the bundles with 7 string beans and roll them in 1 strip of raw bacon and fasten
with toothpick.

Place a few drops of olive oil into a hot fry pan and heat. Cut 1 slice of bacon into small pieces and put it in the
hot oil until the fat is rendered out. Remove the bacon bits when cooked. Place bundles of string beans into hot
bacon oil mixture and fry them on all sides until bacon and string beans are crisp. Remove them from the pan and
place them on paper towel to absorb the excess grease. Yield serves 3
