Spinach and Sweet Corn Salad
4 cups of washed Baby Spinach
1 med size can of drained sweet corn kernels
1/2 lb of Bacon
Sea salt and pepper, to taste
1 large clove garlic, crushed
1/4 cup of extra virgin olive oil
2 tbsp of fresh lemon juice
Cut bacon into med size pieces and fry the bacon until well cooked and just crisp, drain and set aside.
For the dressing, whisk together all ingredients except lemon juice in small bowl.
Wash the spinach well to ensure that all grit is removed and dry very thoroughly. A salad spinner works great
here, or just put the spinach in a big dish towel and pat dry. Getting the leaves dry is a crucial step or your salad
will be watery and bland if you fail to dry them well.
Combine spinach and drained corn in large salad bowl and add the dressing and toss to coat.
Just before serving, add the lemon juice and mix well, then top with bacon bits and serve.
