Roasted Garlic Smashed Potatoes


2 Heads of peeled Garlic
3 lbs of Quartered Red Potatoes
1 Tbls of Fresh Chopped Parsley
1/2 Cup of Milk
2 oz of Butter
1/2 Tsp of Salt
1 Tsp of Freshly Ground Pepper
1/4 Cup of Parmesan Cheese

Heat oven to 350 degrees, coat peeled garlic with a tablespoon of olive oil, place on cookie sheet. Roast
15-20 minutes until well browned and soft.

Boil the potatoes with skins on in salted water until tender, about 25 minutes, then drain and place in a mixing
bowl, add remaining ingredients including garlic and fork smash and mix well but till chunky.

Place potatoes in an oven proof serving dish and put them under a broiler for 1-2 minutes or until slightly
browned. Plate with a little more butter or some brown gravy. Yields 6-8 servings.
