Scampi and Linguine
20 Large Shrimp, shelled, cleaned and deveined
¼ Cup of Olive Oil
2 Tbls of Butter
2 Tbls of Fresh Garlic, Chopped
2 Tbls of Seasoned Bread Crumbs
1 Tsp of Fresh Lemon Juice
½ Pound of Linguine
6 Leaves of Fresh Basil Chopped
In a large pot of salted boiling water, add linguine. When pasta is ¾ done, start scampi recipe.
In a heated sauté pan, add olive oil then the butter. When butter is melted, add garlic and cook until transparent.
Add shrimp then stir and cook on each side until slightly brown Add lemon juice and mix, then add the bread
crumbs and mix Using tongs or a spaghetti spoon, remove pasta from water and put into sauté pan. Toss with
shrimp adding pasta water if scampi is dry. Garnish with basil, parsley and lemon wedges.
