Sausage with Potatoes, Peppers & Onions
8 links Italian sausage ( sweet, hot or combination )
1 large yellow onion sliced
1 large green pepper sliced
1 large red pepper sliced
6 medium thin skinned potatoes cut into wedges
¼ cup of olive oil
1 tbl of oregano
¼ cup of grating cheese
Salt and pepper to taste
Put peppers, onion and potatoes into a metal roasting pan and mix with oil, spices and cheese coating everything
Add the sausages to the pan and coat them with oil mixture until fully coated. Place sausage on the bottom of pan
in the center with the vegetables around them.
Cover pan with foil and bake in a preheated 375 degree oven on the center rack for 45 minutes, then check that
sausage is browning on bottom. If browned, turn sausage over so cooked side is up and replace foil and bake
again for 20 minutes, check sausage for doneness.
Remove tin foil and bake again for 15 minutes (Potatoes should be browned and starting to crisp). When potatoes
are done to desired crispness, remove sausage and vegetables from the oven and serve family style.

If you like your potatoes crisp, remove the sausages when done and put the pan under the broiler for a minute,
but be very careful not to let them burn.
