Rootie Tootie Ribs


1 - 2 Lbs of Ribs ( any kind )
1 12 oz Bottle of good Root Beer
½ Cup of Dark Brown Sugar
Dry Adobo Seasoning
Paprika Powder
1 Large Onion
1 Tsp of Worcestershire sauce

Slit the ribs with a knife between the bones down to where the thick part of the meat starts removing any excess
fat. Sprinkle a good amount of adobo, paprika and a splash Worcestershire sauce all over the ribs and vigorously
massage seasoning into the meat on both sides and between the slit ribs. Cover and refrigerate for about 2 or
hours more.

Cut the onion into large pieces and fry them with a little oil until they start to caramelize. Add root beer and bring it
to a boil and then add the brown sugar whisking until melted and turn off heat. Put ribs back into the pan meat
side down and cover tightly with a lid or some aluminum foil. Place the pan into a pre heated 250 degree oven
and braise them for 1 1/2 hours.

Remove the lid and baste ribs with some of the onion root beer glaze. Put the ribs back into the oven uncovered
for another 30 minutes or until glaze is nice and thick and the ribs are fall off the bone tender. Plate with onions
and glaze over ribs and  serve with corn on the cob or a baked potato. Yields 2 servings
