Mussels". This is a delicious way for all you seafood lovers to prepare this savory dish.

4 lb of fresh mussels
5 lrg garlic cloves minced
1 lrg red bell pepper cut julienne strips
1 lrg green bell pepper cut julienne strips
1 lrg onion sliced thin
3 links of Spanish Chorizo sausage cut into 1/4 inch rounds
2 cups of dry white wine
3 dash Tabasco pepper sauce
2 bay leaves
6 black peppercorns crushed
1 tsp coarse salt
Scrub the mussels well in several changes of water, scrape off the beards and rinse the mussels.
In a large dutch oven combine the garlic, bell peppers, onion, and sausage and cook the mixture in the
oil over moderately low heat, stirring until the vegetables have softened.
Add the wine, mussels, Tabasco, bay leaves and the salt. Steam the mussels covered over heat,
shaking the kettle occasionally for 5 to 6 minutes, or until the mussels have opened. Discard the bay
leaves and any unopened mussels. Plate with juices and fresh crusty bread. 4 to 6 servings.
