Here is a great recipe for a "Potato and Garlic Soup" submitted by Jennie from Nebraska.
I love soup and this tasty treat should be a standard in everyone's recipe file. I have tons
of soup recipes and now I have one more. Make this one today, you won't regret it.
1 tbl olive oil
1 cup chopped onion
4 cups of chicken broth or vegetable broth
2 lb russet potatoes peeled and cut in 1/2 in pieces
6 lrg garlic cloves peeled
1 x bay leaf
1/4 cup chopped chives or green onions
1 cup of Fresh Sliced Mushrooms
Heat olive oil in heavy large saucepan over medium heat. Add onion, saute until golden,
about 10 minutes. Add broth, potatoes, garlic, mushrooms and bay leaf and bring to a boil.
Reduce heat to medium-low, cover and simmer until potatoes are very tender, about 20
minutes . Cool slightly. Discard bay leaf. Coarsely puree soup in blender 1 cup at a time,
about 20 seconds per batch (do not over process). Return soup to same saucepan.
Season to taste with salt and pepper. Simmer until heated through. Ladle soup into bowls.
Sprinkle with chives and serve. Yields 2 - 4
If you like cheese like we do here at the Inn, sprinkle in some shredded cheddar or any
other kind of cheese you fancy after serving.
