Mini Zucchini Quiche


1 Cup of Bisquick
1/2 Cup of Vegetable Oil
4 Eggs

Marinate for at lease 2 hours the following”

3 Cups of Grated Young Zucchini             
½ Cup of Chopped Onions
½ Cup of Grated Parmesan Cheese                        
½ tsp Oregano
2 tsp Parsley (fresh)                        
A Dash of Pepper
½ tsp of Salt                                         
½ Clove of Garlic Minced

Mix 1 cup of Bisquick, ½ cup of vegetable oil and 4 eggs until it forms a batter like consistency.

Add the marinade to the mixture and fold it in well enough so that all ingredients can fit on a spoon.

Spoon mixture into butter greased mini muffin pans 3/4 of way.

Bake at 350 degrees for 20-25 minutes or until golden.

Yields approx 36 mini servings

Inn Tip*

Quiches can be made ahead and frozen. To reheat, place on baking sheet and bake in preheated 325° F. oven
for 25 to 30 minutes or, place 2 to 4 quiches on microwave-safe plate and microwave on MEDIUM-HIGH (70%)
power for 2 1/2 to 5 minutes or until hot.
