Grilled Eggplant Stacker
Eggplant sliced into 1/2 inch rounds with skin left on
Tomato sliced into 1/2 inch rounds
Hummus (any kind with garlic)
Extra Virgin Olive Oil
Salt & Pepper
Brush eggplant on both sides with olive oil.
On a medium high grill, (indoor or outdoor) grill eggplant on both sides until golden brown.
Place grilled eggplant slice on serving dish and spread a thick amount of hummus on top to the edges.
Place tomato slice on top with some salt and freshly ground pepper to taste followed by crumbled feta cheese.
Sprinkle a little bit of dried oregano on top of cheese followed by a good drizzle of extra virgin olive oil and serve.
1 medium size eggplant should make 4 - 6 stackers.
For best results match the size of the tomato slice to the size of the grilled eggplant.
