Batter Fried Vegetable Mix


1/4 lb of Broccoli Florets
1/4 lb of Cauliflower Florets
1/4 lb of Small Button Mushrooms
1/2 lb 4 inch Zucchini Strips ( Halved & Quartered )
2 Large Onions Peeled and sliced into Rings
2 Cups of All-Purpose Flour
1/2 Teaspoon each of Salt and Pepper
4 lg Eggs separated
2 Cups of Chilled Seltzer
4 Cups of Vegetable Oil for deep frying

In a bowl whisk together flour, salt and pepper. Whisk in 1 cup of the seltzer, 4 egg yolks and whisking until
smooth and let batter stand 30 minutes. If needed, thin batter with enough of the remaining seltzer to reach
consistency of crepe batter.

In another bowl beat egg whites until stiff and then fold them into the batter.  

In a deep fryer, heavy cast iron dutch oven or sauce pan, heat vegetable oil to 375 degrees. Working in batches,
dip vegetables in batter, shaking off excess and fry until golden brown. Remove with slotted spoon or spider to a
sheet pan lined with paper towels to drain and salt. Keep warm in a 250 degree oven until ready to plate. Serve
with a spicy marinara sauce or a Japanese Wasabi relish or your own favorite dipping sauce.
