Cowboy Steak Omelet
1 6 oz Sirloin Steak
1 Small can of Pork and Beans
1 Medium Onion Sliced into Rings
Salt and Pepper to Taste
In a heated cast iron skillet or omelet fry pan, add onions with a little vegetable oil and fry until they turn soft and
caramelized and then remove them.

In a bowl beat 3 eggs with a little salt and pepper and add it to the fry pan at med high heat. Spread eggs all
around the fry pan and with a spatula loosen the edges so it can be lifted to form an omelet.
When the omelet is set and 3/4 of the way cooked, add the steak to the pan on one side of the omelet and with a
slotted spoon, put on several tbls of your favorite pork and beans that have been warmed in the micro wave or on
the stove top. Top the omelet with some of the cooked onions and then fold the other side of the omelet over the
steak and remove it from the pan to a serving dish. Garnish with a little more beans and some more of the
cooked onion, salt and pepper to taste.
