Chicken Mac Salad

Ingredients:

2 cups of cut up leftover chicken
1/2 lb of Penne pasta
2 tbl of mayonnaise
1 tbl of lemon juice
1/4 tsp salt
1/4 tsp of black pepper
1/4 cup of chopped basil

Step1
Cook pasta to al dente, drain and cool.

Step2
Mix mayonnaise, lemon juice, salt and pepper until blended.

Step3
Toss chicken with cooled pasta and the remaining ingredients in a large bowl. Cover and refrigerate for at least 2
hours or until chilled. Garnish with some lemon slices and grape tomato slices.

Serves 2-4.
